Easy Homemade Hot Chocolate Mix
A rich make-ahead hot chocolate mix with real baking chocolate and cocoa, ready to stir into hot milk whenever you want a thicker cup.
Prep 10 min · Total 20 min · Makes about 3 cups mix (24 servings)

Ingredients
- 2 bars 100% cacao baking chocolate
- 1 cup Dutch process cocoa powder
- 1 cup sugar
- 2 tablespoons cornstarch
- 1/2 teaspoon kosher salt
Directions
- Freeze the chocolate bars until they are solid all the way through, about 10 minutes. Take them out, snap them into uneven chunks, and add them to a food processor along with the cocoa powder, sugar, cornstarch, and salt. Run the machine until the mixture becomes a fine powder, about 1 minute. Spoon the mix into an airtight container, then keep it in a cool, dark spot for up to 3 months.
- For a mug of hot chocolate, combine 1 to 2 tablespoons of the mix, or more if you like, with 1 cup boiling milk. Whisk, or simply stir, until the drink looks even. For a thicker cup, put it back on the heat and simmer for 30 seconds, until it turns smooth and thick.
