Ingredients
- 3/4 cup apple juice, divided
- 1 – 2 chipotle peppers in adobo sauce
- 1 1/2 tsp honey
- 1 tsp ancho chili powder
- 1 pouch KC Masterpiece® Sweet Honey BBQ Sauce Mix and Dry Rub
- 2 lbs boneless, skinless chicken breasts, diced into 1-inch cubes
- Salt and freshly ground black pepper
- Vegetable oil, for brushing grill
Directions
- For the sauce, combine 1/4 cup apple juice and the chipotle peppers in a food processor. Pulse until the peppers are blended into a puree, then transfer the mixture to a small mixing bowl. Whisk in the remaining 1/2 cup apple juice, honey, ancho chili powder and BBQ Sauce Mix until smooth and evenly combined. Set the sauce aside.
- For the chicken, soak wooden skewers in water for at least 30 minutes if you are using them. Plan on filling 7 of the shorter sticks. Heat your grill to medium, aiming for about 375 degrees. Slide the chicken pieces onto the skewers until all of the chicken is used, folding pieces when needed so they sit securely. Sprinkle salt and pepper over both sides of the chicken. Lightly oil the grill grates, then add the skewers and cook for about 4 – 5 minutes per side, until the chicken is almost cooked through. Brush both sides with half of the sauce, then continue grilling for about 1 – 2 minutes more per side, until the chicken is cooked through and browned in spots on the outside. Brush with the remaining sauce and serve warm.
