Ingredients
- 1 pound Brussels sprouts
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 chipotle peppers, from a can of chipotles in adobo
- 1/4 cup honey
- 1 tablespoon adobo sauce, from chipotle can
Directions
- Heat the oven to 400 degrees F. Trim and halve the Brussels sprouts through the stem end, then coat them with the olive oil, salt, and pepper. Arrange them in a single, even layer on a baking sheet and roast for 15 minutes.
- While the sprouts roast, make the sauce. With a small knife, cut the chipotle peppers in half and scrape out the seeds. Mince the peppers, then stir them in a small bowl with the honey and 1 tablespoon of adobo sauce from the can.
- Take the baking sheet out of the oven and stir the sprouts so they cook evenly, then settle them back into one flat layer. Coat them with the honey chipotle mixture, holding back a few tablespoons to finish. Slide the pan back into the oven and bake for another 10 minutes.
- Spoon the reserved sauce over the sprouts and serve them warm.
