Ingredients
- 1/4 cup butter
- 1/3 cup honey
- 4 large cloves garlic, crushed
- 2 tablespoons fresh lemon juice
- 1.2 kg / 2 1/2 pound side of salmon
- Sea salt, to taste
- Cracked pepper, to taste, optional
- Lemon slices, to serve
- 2 tablespoons fresh chopped parsley
Directions
- Set an oven rack in the center position. Heat the oven to 375°F | 190°C. Cover a baking tray / sheet with a large sheet of foil that can come up and close over the fish as a packet; if your fillet is wider, use 2 long pieces of foil overlapped lengthways to make the salmon packet.
- In a small saucepan, melt the butter over low-medium heat. Whisk in the honey, garlic and lemon until the honey melts into the butter and everything is fully blended.
- Set the salmon on the prepared baking tray / sheet. Pour the butter and honey mixture over the fish, then use a pastry brush or spoon to coat the surface evenly. Season generously with salt, about 2 teaspoons, and cracked pepper. Bring the foil up over the salmon, covering it and sealing the packet tightly so the butter stays inside.
- Bake the salmon until it is cooked through, about 15-18 minutes, depending on the thickness of your fish and how done you like it. Carefully unfold the foil, watching for steam, then place it under the grill / broiler on medium heat for 2-3 minutes, until the surface caramelises. Finish with parsley and serve immediately with lemon slices.
