Honey Lime Chicken Skewers

Ingredients

  • 1/4 cup fresh lime juice
  • 2 tsp fresh lime zest
  • 1/4 cup honey
  • 2 Tbsp soy sauce
  • 2 Tbsp olive oil, plus more for brushing grill
  • 1 Tbsp minced garlic
  • 1 Tbsp peeled and minced fresh ginger
  • 2 Tbsp minced fresh cilantro, plus more for garnish
  • 3/4 tsp salt
  • 1 tsp freshly ground black pepper
  • 1/4 tsp cayenne pepper, or more to taste
  • 1 3/4 lbs. bonless skinless chicken breasts, cut into 1 1/4-inch cubes

Directions

  1. Start the marinade in a mixing bowl with the honey, soy sauce and olive oil. Whisk in the lime juice and zest, then add the garlic, ginger, cilantro, salt, pepper and cayenne and mix until smooth.
  2. Add the chicken to a gallon size resealable bag, pour the marinade over it, then seal the bag while pressing out the extra air. Massage the bag so the chicken is well coated, and refrigerate for at least 1 hour and no more than 6 hours. If you are using wooden skewers, soak them in water for at least 1 hour.
  3. Heat a grill over medium heat, aiming for about 375 degrees. Thread the chicken onto skewers, with about 6 or 7 pieces on each. Brush the grill grates with oil, set the skewers on the grill, and cook for about 7 minutes per side, until the chicken reaches 165 degrees in the center. Serve warm, topped with cilantro if desired.
