Ingredients
- 2.5 cups all-purpose flour
- 1 tsp salt
- 1 Tbsp sugar
- 4 tsp baking powder
- 1 pint heavy whipping cream
Directions
- In a large bowl, stir the flour, salt, sugar, and baking powder until everything is evenly mixed. Add the heavy cream and stir until the dough gathers into a sticky ball. Dust the dough generously with flour, then move it onto a floured work surface. Knead it gently 2-3 times, stopping as soon as it feels combined and has taken on enough flour to no longer be sticky. Try not to fuss with it too much.
- Pat the dough gently into a 6x8 rectangle, then fold it in half. Repeat that folding process 2 more times. Those folds are what help give the biscuits their layers.
- After the last fold, pat the dough into a 6x8 rectangle one final time. It should be about 1 inch thick. Cut the dough into 12 squares.
- Cover a baking sheet with parchment, then arrange the cut biscuits on top with just a little space between them. Cover them with plastic wrap and freeze for a couple of hours, or until they are solid. Label and date a gallon-sized freezer bag. Transfer the frozen biscuits to the bag for long-term storage, 3-4 months.
- When you are ready to bake, put as many biscuits as you want on a parchment-lined baking sheet. Let them thaw only while the oven heats to 400ºF. Once the oven is ready, bake until the biscuits have risen tall and the tops are a deep golden brown. Depending on your oven and the biscuit size, this should take about 18-22 minutes if frozen, or 16-20 minutes if fresh.
