Hummus Mashed Potatoes
Tender mashed potatoes get a savory, creamy boost from hummus, butter and warm milk for an easy twist on a classic side.

- Butter
- Water
- Milk
- Pepper
- Garnish
- Cream
Directions
- Peel the potatoes if you prefer them that way, then cut them into big, evenly sized pieces. Put them right into a large stockpot and add enough water to cover. Set the pot over high heat and bring it to a boil. Lower the heat to medium and cook at a gentle simmer for 20-30 minutes, until a fork slides into the potatoes easily.
- Take the pot off the heat and pour off the water. Put the pot back on the burner and mash the potatoes with a potato masher until they are smooth. Turn off the heat, then stir in the butter, warmed milk, hummus, salt and pepper until everything is blended. Taste and add more salt and pepper if needed. For a creamier texture, stir in additional warmed milk until the potatoes are as soft and smooth as you like. Serve warm, with optional garnishes on top if desired.
