Prep 15 min · Makes 6 mini pies

Ingredients
- 6 mini store-brought graham cracker crusts
- 1 1/2 cups heavy cream, divided
- 1/2 cup milk
- 1/2 tsp vanilla extract
- 1 pkg white chocolate, vanilla or cheesecake instant vanilla pudding mix
- 10 oz strawberries or raspberries
- 4 Tbsp powdered sugar, divided
Directions
- Whisk 1 cup heavy cream with the milk, vanilla, and instant pudding mix in a mixing bowl for 2 minutes, until the mixture is quite thick. Cover the bowl and place it in the refrigerator.
- Cut the strawberries into small pieces, or halve the raspberries if you are using them instead. Transfer the berries to a small mixing bowl, mix in 2 Tbsp powdered sugar, and leave them while you finish the filling.
- In another mixing bowl, use an electric mixer to beat 1/2 cup cream until it holds soft peaks. Add 2 Tbsp powdered sugar, then continue whipping until the cream stands in firm peaks. Set it aside.
- Take the pudding mixture out of the refrigerator and give it another stir. Spoon 1/4 cup of the mixture into each graham cracker crust, then smooth the tops. Divide the diced strawberries evenly among the pies, using a few heaping tablespoons for each one. Pipe the sweetened whipped cream over the pies and serve immediately.
