Ingredients
- 2 full racks baby back ribs
- About 1/3 cup dry rub for pork, store-bought or homemade
- 3/4 cup water
- 3/4 cup apple cider vinegar
- 1/2 teaspoon liquid smoke, optional
- 2 cups barbecue sauce, favorite store-bought or homemade
Directions
- Prep one rack of ribs at a time. Slide a paring knife under the thin, see-through membrane on the underside of the ribs to loosen it, then pull it off; ideally, it will come away in one big piece. Removing it helps the ribs slice and serve more easily.
- Coat the ribs generously on every side with the dry rub. If you can plan ahead, cover them and refrigerate overnight.
- Set foil balls or a rack in the bottom of your Instant Pot so the ribs sit above the liquid. Add the water, vinegar, and liquid smoke, if using. Place the ribs inside, curving them as needed so they fit. Two racks of baby back ribs should fit in a 6-quart Instant Pot or pressure cooker.
- Seal the pressure cooker and cook at high pressure for 30 minutes. Let the pressure come down naturally for 10 minutes, then carefully release whatever pressure remains.
- Transfer the ribs from the Instant Pot to a baking sheet and lay them out. Brush them generously with barbecue sauce, then broil on high heat for 5 minutes. Cut the ribs apart and serve with sides and more sauce.
- For leftover ribs, wrap them snugly in foil and warm in a 350˚F oven until hot, about 15 minutes. You can also reheat them on a grill over medium heat for 10-15 minutes. Serve with extra sauce.
