Instant Pot Low-Carb Chicken Tomatillo Soup
A bright Instant Pot chicken soup with tomatillos, green chiles, cauliflower rice, cilantro, lime, and avocado for a fresh low-carb bowl.

Ingredients
- I can Ro-Tel Diced Tomatoes and Green Chiles
- 6 medium-sized tomatillos, chopped to make about 2 cups finely chopped tomatillos
- 1 onion, finely choppedĀ
- 8 cups chicken stock
- 1 can diced green chiles
- 1 tsp. Mexican oregano
- 1/2 tsp. ground cumin
- 1 tsp. salt
- fresh-ground pepper to taste
- 4 cups diced cooked chicken breast
- 1 pkg. frozen cauliflower rice
- 1 cup chopped fresh cilantro
- 1 T fresh-squeezed lime juice
- 2 diced avocados, for serving
- Fresh lime pieces to squeeze into the soup at the table
Directions
- Pour the Ro-Tel Tomatoes into a colander in the sink, and leave them to drain while you prep the tomatillos and onion. Original Ro-Tel works here, but mild Ro-Tel is the gentler choice if kids are eating.
- Peel away the tomatillo husks, rinse the tomatillos if they need it, trim away the stem ends, and cut them into small pieces. Finely chop the onion too.
- Add the drained tomatoes, chopped tomatillos, and onion to the Instant Pot, then pour in the chicken stock. Stir in the diced green chiles, sprinkle in the Mexican Oregano and ground cumin, and season with salt and fresh-ground pepper. Kirkland Organic Chicken Stock works, and homemade chicken stock is even better if you have it.
- Secure the lid. Use MANUAL at LOW PRESSURE, or choose the Soup Setting, and set the cook time for 20 MINUTES.
- As the Instant Pot heats and then cooks for 20 minutes, dice enough cooked chicken breast to measure 4 cups cooked chicken. Cut-up rotisserie chicken from Costco is an easy option here.
- Before opening the 12 oz. package of frozen cauliflower rice, break up the frozen clumps by pounding the package on the counter. Empty the cauliflower rice into a bowl or measuring cup so it can begin to thaw.
- When the pressure-cook cycle ends, release the pressure using the QUICK RELEASE METHOD.
- Stir the cooked chicken and cauliflower rice into the Instant Pot. Switch to SAUTE at MEDIUM HEAT, and let the soup simmer uncovered for 15-20 minutes, until it has reduced a bit and the flavors have come together. If it seems to be boiling too hard, lower the Instant Pot temperature to low.
- While the soup simmers, chop the cilantro, dice the avocado, and cut the limes. If you want to slow browning, toss the avocado with a little lime juice.
- Stir in the chopped cilantro and lime juice, then simmer for another 2-3 minutes.
- Serve the soup hot, with extra lime and chopped avocado to add at the table if desired.
