Ingredients
- 1 head cabbage, chopped
- 1 cup chopped onion
- 1 red bell pepper, finely chopped
- 2 small carrots, cut in small rounds or chopped
- 2 cups diced lean ham
- 2 bay leaves, optional but good
- 1 tsp. Spike Seasoning
- 1 tsp. granulated garlic
- 1 T dried parsley
- 1 tsp. Beau Monde Seasoning or season salt
- Coarse ground black pepper to taste
- 6 cups chicken stock
- 2 packets Goya Ham Flavor Concentrate or other ham flavor base
Directions
- Chop the cabbage, onion, red bell pepper, ham, and carrots, if you’re including them. Add the cabbage, onion, and red bell pepper to the Instant Pot first so they form the base.
- Scatter in the ham, carrots, and bay leaves, then season everything with the Spike Seasoning, granulated garlic, dried parsley, Beau Monde Seasoning, and black pepper.
- Stir the Goya Ham Flavor Concentrate or another ham base into the chicken stock, then pour that mixture into the Instant Pot over the other ingredients.
- Secure the lid, choose MANUAL, set it to HIGH PRESSURE, and cook for 15 minutes.
- Allow the pressure to come down naturally for 10-15 minutes, then finish by releasing the remaining pressure manually.
- Serve the soup hot, with freshly grated Parmesan at the table if you’d like.
