Ingredients
- 4 large boneless, skinless chicken breasts, trimmed
- 3/4 cup, mild or medium salsa
- 2 T fresh-squeezed lime juice
- Salt and fresh-ground black pepper to taste for seasoning chicken
- 1 cup grated Mozzarella, or more
Directions
- Cut away any visible fat or unwanted bits from the chicken breasts. Coat the Instant Pot with nonstick spray, add the chicken, and season it with salt and fresh-ground black pepper.
- Stir together the salsa and fresh lime juice, then pour that mixture over the chicken. Secure the Instant Pot lid, and cook on MANUAL, HIGH PRESSURE, for 6 minutes.
- When the cooking time ends, allow the pressure to come down naturally. Transfer the chicken breasts to a cutting board, keeping the salsa mixture in the pot.
- Switch the Instant Pot to SAUTE, HIGH TEMPERATURE, and simmer the sauce until it is thicker and reduced, about 8-10 minutes. Check on it a few times as it cooks.
- While the sauce reduces, heat the oven broiler and position the rack about 6 inches from the heat. Spray a baking dish with nonstick spray. Slice the chicken breasts in half lengthwise, then nestle them close together in the dish.
- Once the sauce is as thick as you like it, turn off the Instant Pot and spoon the sauce over the chicken. Scatter a generous layer of grated Mozzarella over the top.
- Broil until the cheese has melted and is just beginning to brown in spots, about 3-4 minutes. Keep a close eye on it, especially if your broiler runs hot.
- Serve hot, with diced avocado, sour cream, or Green Tabasco Sauce to add at the table if desired.
