Ingredients
- 4 large boneless, skinless chicken breasts
- 3/4 cup mayo
- 6 T coarsely-grated Parmesan
- 3/4 tsp. poultry seasoning
- 3/4 tsp. garlic powder
- Fresh-ground black pepper to taste
Directions
- Heat the oven to 375F/190C. Coat a baking dish with non-stick spray, using one that fits the chicken without too much extra space.
- Trim the chicken breasts thoroughly, and if any are especially large, cut them in half if you like. Place each trimmed piece in a small Ziploc bag and gently flatten it with a meat mallet or another heavy object until the thickness is even, about 1/2 inch. Go easy here, because too much pounding can make the chicken start to fall apart.
- Make small, shallow cuts across each chicken breast, working crosswise down the meat and taking care not to slice all the way through.
- Stir together the mayo, poultry seasoning, garlic powder, and black pepper, then fold in the coarsely grated Parmesan.
- Arrange the chicken breasts in the prepared baking dish. With a rubber scraper, cover the top of each piece with the mayo-Parmesan mixture, spreading it all the way across the surface.
- Bake for 35-40 minutes, until the chicken feels firm and the topping is browned. Some liquid and melted cheese may collect in the dish; just leave that behind and transfer the chicken to a serving platter.
- Serve hot.
