Prep 20 min · Makes 4 servings

Ingredients
- Zest and juice from one large lime
- 2 medium avocados, diced
- 2 cups peeled and diced jicama
- 1 cup cherry or grape tomatoes, sliced in half
- 1/4 cup thinly sliced green onion
- 1/3 cup crumbled Feta cheese
- Salt, to taste
Directions
- Use a bowl big enough for the finished salad, and add the lime zest and juice to it.
- Dice the avocados right into that bowl, then stir them with the lime juice and zest so they get nicely coated.
- Peel the jicama and cut it into 1/2-inch slices. To make peeling less fussy, slice the jicama to the thickness you want first, then trim the peel from around each slice.
- Add the jicama cubes to the avocado and lime mixture, and toss them in.
- Halve grape or cherry tomatoes until you have 1 cup.
- Slice the green onions very thinly on the diagonal until you have 1/4 cup.
- Crumble the Feta until you have 1/3 cup.
- Carefully fold the tomatoes, green onion, and Feta into the jicama and avocado.
- Taste the salad, add more lime juice if you think it needs it, season with salt to your liking, and serve.
