Kaeshi

Ingredients

  • 1/2 cup sake
  • 1/4 cup mirin
  • 1/4 cup soy sauce
  • 3 tablespoons sugar
  • 2 tablespoons dark brown sugar
  • 2 tablespoons honey

Directions

Combine the ingredients in a saucepan and set it over high heat until it reaches a boil. Take the pan off the heat, then let the kaeshi cool to room temperature. Move it to the refrigerator for 3 days so the flavors can settle in and deepen. It will keep in the refrigerator for up to 1 month.
