Lacinato Kale Gratin From 'A Boat, a Whale & a Walrus'

Ingredients

2 bunches lacinato kale, stems removed and leaves roughly chopped

2 tablespoons olive oil

1/2 cup finely diced onion

2 cloves garlic, minced

1/4 teaspoon red pepper flakes

1/4 teaspoon freshly ground black pepper

1/2 cup dry white wine or vegetable broth

3/4 cup heavy cream

1/2 cup grated Parmesan cheese

Salt to taste

2 tablespoons breadcrumbs

Directions

Preheat oven to 375°F . In a medium bowl, combine breadcrumbs, Parmesan cheese, and salt to taste; set aside. In a small saucepan over medium heat, combine cream, wine or broth, black pepper, red pepper flakes, garlic, and onion. Simmer for 5 minutes until the onion is softened. Remove from heat and set aside. Heat olive oil in a large skillet over medium-high heat. Add kale and cook for 3 minutes until wilted but still bright green. Remove from heat and set aside. Grease an 8x8-inch baking dish with butter or cooking spray. Spread half of the kale in the bottom of the dish and top with half of the cream mixture and half of the breadcrumb mixture; repeat layers with remaining ingredients ending with breadcrumb mixture on top. Cover dish with foil and bake for 25 minutes until bubbly and golden brown on top. Serve hot!.
