Leftover Tofu, Halloumi, and Tomato Salad

Ingredients

  • 2-3 cups salad greens
  • 1 tsp. olive oil, for browning tofu
  • About 3 oz. slice of leftover Baked Tofu, browned and cut into cubes
  • 1 oz. slice Halloumi cheese, browned and cut into cubes
  • 4 small tomatoes, cut into pieces
  • 1-2 T salad dressing of your choice
  • Fresh ground black pepper to taste

Directions

  1. Warm the olive oil in a small non-stick frying pan.
  2. Add the slice of Baked Tofu, along with the Halloumi if you’re using it, and cook until both sides are nicely browned.
  3. Move everything to a cutting board, then chop it into roughly 1 inch square cubes.
  4. Cut the tomatoes so the pieces are bite-sized.
  5. Rinse the salad greens, then dry them in a spinner or with paper towels.
  6. Toss the greens with the dressing, then transfer them to a salad bowl.
  7. Scatter the tofu cubes, cheese cubes, and tomato pieces over the dressed greens.
  8. Finish with fresh ground black pepper and serve.
