Mediterranean Grilled Cheese Sandwich
Mediterranean-style grilled cheese layers melty mozzarella, tangy feta, garlicky spinach, tomato, olives, red onion, and basil on crisp rustic bread.

Ingredients
- 2 slices rustic white bread or sourdough bread
- 1 Tbsp extra virgin olive oil
- 2 oz . Wisconsin Whole Milk Mozzarella cheese
- 1 oz . Wisconsin Feta cheese
- 2 cups fresh spinach
- 4 Roma tomato slices
- 2 Tbsp diced black olives
- 1 Tbsp finely chopped red onion
- 2 tsp chopped fresh basil
- 1/4 tsp finely minced garlic )
- Freshly ground black pepper
Directions
- Warm 1 tsp olive oil in a non-stick 10-inch skillet set over medium-high heat. When it’s hot, add the garlic and spinach, and sauté just until the spinach starts to wilt, about 30 seconds. Take the skillet off the heat, stir in the basil, and set the mixture aside.
- Build the sandwich by spreading the Mozzarella and Feta over 1 slice of bread in an even layer. Arrange the tomatoes over the cheese in a single layer, then spread the spinach mixture over the tomatoes. Sprinkle the olives and red onions on top, season with freshly ground black pepper, and close the sandwich with the remaining slice of bread.
- Spread 1 tsp olive oil evenly across the skillet, add the sandwich, and cook it over medium-low heat. Let it go until the bottom is golden brown, about 3 – 4 minutes, then remove the sandwich from the pan. Spread the remaining 1 tsp olive oil evenly in the skillet, carefully turn the sandwich onto its other side, and return it to the pan over medium-low heat. Cover the skillet with a lid and cook until the bottom is golden brown, about 2 – 3 minutes. Serve immediately.
