Ingredients
- 2 medium sweet potatoes, peeled and cut into medium-sized cubes
- 3 T olive oil
- 1 T balsamic vinegar
- 1 tsp. garlic powder
- Fresh ground black pepper to taste
- 1 pkg. pre-cooked chicken, turkey, or pork sausage
- 1 lb. broccoli, trimmed and cut apart to make about 3/4 pound broccoli pieces
- Salt and additional fresh-ground black pepper to taste
Directions
- Heat the oven to 450F/230C, and coat a sheet pan with non-stick spray. Cut the two medium sweet potatoes into cubes that are not too small, about one inch across.
- In a bowl, whisk the olive oil, balsamic vinegar, garlic powder, and black pepper until combined.
- Add the sweet potato cubes to a bowl, pour in half of the oil-balsamic mixture, and toss until they are coated.
- Arrange the sweet potatoes on the sheet pan in a single layer. Slide the pan into the oven and roast for 15 minutes.
- Cut the sausage into pieces about 3/4 inch thick. Trim the ends if you want the pieces flat on both sides.
- After the sweet potatoes have cooked for 15 minutes, scatter the sausage onto the sheet pan and return it to the oven for 10 minutes more.
- Cut the broccoli into evenly sized pieces, roughly matching the size of the other ingredients.
- Place the broccoli in the bowl and toss it with the remaining oil-balsamic mixture.
- Take the sheet pan out of the oven and flip the sausage pieces. Make space among the sausage and sweet potatoes, then nestle the broccoli pieces in between.
- Return the sheet pan to the oven and roast for 15 minutes more, until the broccoli is cooked the way you like it and the sausage and sweet potatoes are well browned.
- Add a little salt and fresh-ground black pepper, and serve hot.
