Lemon Italian Ice

Ingredients

  • 4 cups boiling water
  • 1 cup sugar
  • 1 cup fresh juice and 1 tablespoon zest from about 8 lemons
  • 2 teaspoons lemon extract

Directions

  1. In a large bowl or measuring cup, stir the sugar into the boiling water until it disappears. Whisk in the lemon juice, lemon zest, and lemon extract, then cover the mixture and refrigerate it until thoroughly cold, 2 to 3 hours.
  2. Pour the chilled mixture into an electric ice cream maker, and churn it following the manufacturer’s instructions until it turns thick and slushy with icy crystals throughout. Scrape it into a large bowl or container, then place it back in the freezer until it reaches the firmness you like, about 2 to 3 hours.
