London Broil Braised in Stout

Ingredients

  • 2 pounds London broil steak
  • 1 bottle stout beer
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups beef broth

Directions

  1. Heat the oven to 350 degrees F (175 degrees C).
  2. Combine the beef broth, salt and pepper, smoked paprika, thyme, Worcestershire sauce, tomato paste, garlic, and onion in a small bowl. Put it aside for now.
  3. Warm the olive oil in a large skillet set over medium-high heat. Place the London broil steak in the pan and sear it on each side, about 5 minutes per side, until browned. Move the steak into a 9x13 inch baking dish.
  4. Add the stout beer to the skillet and let it come to a boil. Turn the heat down to low and let it simmer for about 5 minutes, until it has reduced by half. Spoon the stout mixture over the steak in the baking dish. Cover the dish with foil and bake in the heated oven for 1 hour, until the steak feels tender when tested with a fork.
  5. Take the dish out of the oven and pour the reserved broth mixture over the steak. Cover it with foil once more, then put it back in the oven for an additional 30 minutes, until the steak is very tender when pierced with a fork. Serve hot with your favorite sides.
