Ingredients
- 4 white fish filets, thawed if frozen
- 1/4 cup melted butter
- 1/3 cup almond flour
- 2 T finely grated Parmesan cheese
- 1/2 tsp. garlic powder
- 1/4 tsp. pepper
- 1/2 tsp. fish rub
Directions
- Heat the oven to 425F/220C, and coat a baking dish with non-stick spray. Warm the butter over low heat until melted. In a shallow bowl large enough to fit the fish, stir together almond flour or almond meal, Parmesan, garlic powder, lemon pepper or pepper, and Fish Rub.
- Dip each fish filet into the butter, flipping it so both sides are covered, then move it into the almond mixture. Press on as much of the coating as you can so it clings to the fish; a fork works nicely for this.
- Bake for 20 minutes, until the fish feels firm when touched and the coating is beginning to turn golden brown. Since the baking time depends on the thickness of the fish, watch it carefully.
