Low-Carb Breakfast Casserole with Italian Sausage, Mushrooms, and Cheese

Ingredients

  • 19.5 oz. uncooked turkey or pork Italian sausage
  • 2 tsp. olive oil + 2 tsp. olive oil
  • 1 lb. sliced mushrooms
  • 2 cups grated Mozzarella cheese
  • 1/4 cup sliced green onions, plus more to sprinkle over the top, optional but good
  • 1 cup cottage cheese, rinsed and drained
  • 10 eggs, beaten until whites and yolks are well combined
  • 1 tsp. Spike seasoning
  • 1/4 cup coarsely grated Parmesan cheese
  • Fresh ground black pepper to taste

Directions

  1. Heat the oven to 375F/190C. Coat a large casserole dish, about 9" x 13", with non-stick spray. Warm 2 tsp. olive oil in a non-stick frying pan set over medium-high heat, press the turkey Italian sausage from the casings into the pan, and cook it until cooked through and beginning to take on color, about 5 minutes. As it cooks, chop it into small pieces with the edge of a metal turner. Once the sausage is ready, arrange it across the bottom of the prepared casserole dish.
  2. If the mushrooms need washing, clean them, dry them in a spinner or with towels, and slice them, or start with pre-sliced mushrooms. Pour another 2 tsp oil into the same frying pan, then cook the mushrooms until they have given off their liquid, the pan is dry again, and the mushrooms are just beginning to brown. Spoon the mushrooms into the dish on top of the sausage.
  3. Scatter 1 cup grated cheese and 1/4 cup sliced green onions across the mushroom and sausage mixture. While those ingredients are cooking, tip the cottage cheese into a fine strainer set in the sink, rinse it gently under cold water, and leave it to drain thoroughly.
  4. Crack the eggs into a medium-sized bowl or a large glass measuring cup, then whisk them with a fork until the whites and yolks are fully blended. Stir in Spike Seasoning, the drained cottage cheese, and 1/4 cup parmesan cheese.
  5. Pour the egg mixture evenly into the casserole dish. With a fork, carefully move the ingredients around just enough so everything is moistened with egg and evenly distributed. Finish by adding the remaining grated cheese on top.
  6. Bake for 30-35 minutes, until the middle is fully set and the top is just starting to turn golden. Serve hot, with additional green onions on top if you’d like.
