Ingredients
- 2 T + 1 T olive oil
- 2 medium onions, diced medium
- 2 pkg. frozen cauliflower rice, 12 oz. each
- Salt and fresh ground black pepper to taste
- Generous amount of Sumac for seasoning
Directions
- Cut the onion into medium pieces.
- Warm the olive oil in a skillet, then stir in the onions. Raise the heat to medium-high and cook them until well browned, about 10 minutes, stirring a few times along the way so they color evenly instead of scorching.
- As the onions cook, loosen the frozen cauliflower rice by breaking it up right in the bag. If you’re using fresh cauliflower instead, prepare it into rice-sized bits using the method noted below the recipe.
- Once the onions have browned, add the cauliflower rice and the other tablespoon olive oil. Season well with salt and freshly ground black pepper, then increase the heat to high.
- Cook the cauliflower, stirring frequently, until the moisture has evaporated and the cauliflower is lightly browned and done the way you like it, probably about 8-9 minutes.
- Finish with a generous sprinkle of Sumac and serve while hot.
- This is best made in the amount you plan to eat right away, since the texture is not especially good after reheating.
