Low-Carb Spicy Cilantro-Peanut Slaw

Ingredients

  • 1/2 large head green cabbage, finely chopped
  • 1/2 cup peanuts, chopped
  • 1/2 cup thinly sliced green onions
  • 1 bunch cilantro, chopped
  • Salt and fresh ground black pepper to taste
  • 2 T rice vinegar, not seasoned
  • 1 T sweetener of your choice
  • 2 tsp. sesame oil
  • 2 tsp. soy sauce
  • 2 tsp. Sriracha sauce
  • 1/4 cup vegetable or peanut oil

Directions

  1. Halve the cabbage and set aside the unused half for a different salad. Cut out the core from the half you’re working with, then slice the cabbage as thinly as you can, keeping the pieces under 1/4 inch. Rotate your cutting board and cut across the slices to make the cabbage very finely chopped.
  2. Slice the green onions thinly, chop the cilantro, and chop the peanuts.
  3. In a bowl or glass measuring cup, stir together the rice vinegar, sweetener of your choice, sesame oil, soy sauce, and Sriracha sauce if you’re using it. Whisk in the oil until the dressing comes together smoothly.
  4. In a large plastic or glass bowl, toss the chopped cabbage with the green onions and cilantro. Pour in the dressing gradually, tossing as you go, until the slaw is as dressed as you like. You might have a little dressing left over.
  5. Add the chopped peanuts and toss just enough to distribute them. Taste, then season with salt and freshly ground black pepper as needed. Serve right away.
