Low-Sugar, Flourless Vegan Apple Crisp

Ingredients

  • 6 medium-sized apples
  • 1/4 cup sweetener of your choice
  • 1 tsp. ground cinnamon
  • 1/2 cup + 2 T rolled oats
  • 6 T almond meal or almond flour
  • 7 T sweetener of your choice
  • 2 T melted coconut oil
  • 3/4 tsp. vanilla
  • 1/3 cup chopped walnuts or pecans, optional

Directions

  1. Heat the oven to 400F/200C, and coat a baking dish with oil or non-stick spray. A crockery oval that runs 11 inches long, with the widest part 8 inches wide, is a good fit.
  2. Peel the apples, remove the cores, and cut the fruit into chunks. An apple slicer can make this go faster; peel the slices afterward, then cut each slice into chunks. Add the apple pieces to a bowl, sprinkle them with your preferred sweetener and cinnamon, and toss until the fruit is evenly coated. Transfer the apples to the prepared baking dish.
  3. If you want a finer topping, pulse the rolled oats in a food processor; leaving them whole is fine too. Move the oats to a bowl, then stir in the almond meal or almond flour and sweetener. For the optional nuts, measure 1/3 cup walnuts or pecans, chop them coarsely with a chef's knife, and mix them in.
  4. Pour the melted coconut oil and vanilla over the topping ingredients. Use a fork to work them through the oat mixture until everything is combined.
  5. Spoon the crisp topping over the apples, spreading it evenly so the fruit is fully covered with the crumbly mixture.
  6. Bake 45-50 minutes, until the topping is lightly browned and the apples are cooked through and bubbling a little.
  7. Serve hot or cold, though hot is especially good. Store any leftovers in the fridge for a few days.
