Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 2 large eggs
- 2 cups whole milk
- 4 tablespoons butter, melted and cooled slightly
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
Directions
- Heat the oven to 400ºF (200ºC). Generously coat a nonstick popover pan with softened butter, or use a muffin pan with 1/2-cup wells.
- To make the puffs, add the 2 tablespoons melted butter, eggs, milk, salt and sugar to a blender, then blend briefly for a few seconds.
- Add the flour and blend for about 10 seconds, stopping as soon as the batter looks smooth.
- Pour the batter into the 9 prepared molds, filling each one 1/2 to 2/3rds full.
- Bake for 35 minutes, until the popovers are richly browned.
- Take the pan out of the oven and let the popovers sit for a few minutes, just until you can handle them comfortably. Lift them from the pan and transfer them to a cooling rack; if any are clinging to the pan, loosen them carefully with a small knife or spatula.
- Stir the sugar and cinnamon together in a medium bowl. Brush each popover thoroughly with the 1/4 cup (60 g) melted butter, covering the outside well, then roll each puff generously in the cinnamon sugar until coated all over. Leave them on the wire rack to cool.
