Ingredients
- 1 1/2 pounds fava beans
- 2 tablespoons sherry or red wine vinegar
- 2 tablespoons olive oil
- 1 medium garlic clove, finely minced
- 2 sprigs fresh rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Directions
- Set a pot of salted water over high heat and bring it to a boil. As it heats, take the fava beans out of their long pods. When the water is boiling, drop in the beans and cook them for about 3 minutes, until they turn vivid green and are barely tender. Drain them, rinse right away with cold water, then slip the bright green beans from their skins and put them aside.
- In a pint jar, add the vinegar, olive oil, garlic, rosemary sprigs, salt, and pepper. Screw on the lid and shake the jar until the vinaigrette comes together.
- Add the prepared fava beans to the jar with the vinaigrette. Put the lid back on and shake gently to coat the beans.
- Leave the beans to marinate for at least 15 minutes before serving. Store the marinated fava beans in the refrigerator for 2-3 days.
