Ingredients
- 1 large log fresh goat cheese
- 2 cups extra-virgin olive oil, or as needed
- 1 teaspoon red chili flakes
- 1 teaspoon whole fennel seeds
- 2 teaspoons pink peppercorns, optional
- 4 strips lemon zest
- 4 bay leaves
- 6 sprigs fresh thyme
- 4 medium garlic cloves, cut in half lengthwise
Directions
- Slice the goat cheese log into 8 even portions; if you like, shape each portion into a ball. Add olive oil to clean, wide-necked jars until each jar is halfway full. Divide the chili flakes, fennel seed, and peppercorns evenly between both jars.
- Place the goat cheese pieces into the jars one at a time, pouring in a bit more olive oil as you go so each piece stays completely submerged. Tuck in the lemon zest, bay leaves, thyme, and garlic. Add more olive oil until the cheese is fully covered. Close the jars and refrigerate for at least a few hours; the flavor is best after 2 days. Store the marinated goat cheese in the refrigerator for up to 1 week, but do not keep it longer than 1 week, since infused olive oil can carry a botulism risk even when chilled.
