Ingredients
- 1/4 cup coconut oil or unsalted butter
- 1/3 cup packed light-brown sugar
- 1/4 cup honey
- 1/8 tsp salt
- 1/2 tsp vanilla extract
- 2 cups quick oats
- 1 1/4 cups Rice Krispies cereal
- 3 Tbsp mini semi-sweet chocolate chips
Directions
Place the coconut oil or unsalted butter, brown sugar and honey in a 2 quart microwave-safe bowl. Microwave on HIGH for 1 minute, then take the bowl out and stir, continuing until the butter melts if that is what you are using. Put the bowl back in the microwave and cook on HIGH for 1 minute longer for coconut oil, or 1 1/2 minutes longer for butter. Remove it carefully, stir in the vanilla, then add the quick oats and mix until they are evenly covered. Fold in the Rice Krispies and toss until coated throughout, then use buttered hands to press the mixture firmly onto one side of a buttered baking sheet. A regular sized cookie sheet works; shape the mixture into 5-inch long bars, using about 1/3 of the baking sheet’s width. Scatter the chocolate chips over the top and press them into the bars. Move the pan to the freezer for 10 minutes, then take it out and slice into 9 bars. Store the bars in an airtight container.
