Microwave Mug Brownie

Ingredients

  • 2 Tbsp salted butter
  • 1/4 cup packed light-brown sugar
  • 1 large egg
  • 1/4 tsp vanilla extract
  • 2 Tbsp cocoa powder
  • 1/4 cup all-purpose flour
  • 1 pinch baking powder
  • 1 pinch salt
  • 3 Tbsp chocolate chips
  • For microwave brownie sundaes:
  • Serve with ice cream
  • Drizzle with chocolate sauce or caramel sauce and sprinkle with sea salt, if desired

Directions

  1. Put the butter and brown sugar in a 12 oz (or larger) mug. Microwave on HIGH power for 45 seconds, then take the mug out and use a fork to stir everything together.
  2. Stir in the egg and vanilla extract, then blend in the cocoa powder. Add the flour, baking powder and salt, and mix until the batter is well combined. Fold in the chocolate chips.
  3. Change the microwave to 50% power and cook the batter for 1 minute 50 seconds – 2 minutes 30 seconds. The exact timing depends on your microwave wattage, so do not push it too far or the brownie can turn tough.
  4. Serve warm with ice cream, plus chocolate sauce or caramel sauce and sea salt, if desired.
