Ingredients
- 2 cups quick oats
- 1 1/2 – 2 cups Rice Krispies cereal
- 1 cup chunky peanut butter, or 3/4 cup creamy peanut butter
- 1/2 cup honey
- 1/4 cup dark brown sugar
- 1/8 tsp salt
- 1/2 tsp vanilla extract
Directions
- Fit aluminum foil into an 8 by 8-inch baking dish, leaving a 2-inch overhang. In a large mixing bowl, stir the oats and Rice Krispies together, then put the bowl aside.
- In a separate microwave-safe mixing bowl, add the peanut butter, honey, brown sugar, and salt. Microwave on HIGH power for 1 minute, then take it out and stir. Place it back in the microwave and cook on HIGH power for 1 minute more.
- Remove the bowl from the microwave, add the vanilla, and whisk for 30 seconds. Pour the peanut butter mixture over the oat mixture, then toss until everything is evenly coated.
- Transfer the mixture to the prepared baking dish and press it down firmly into a level layer. Cover with plastic wrap and freeze for 10 – 15 minutes or refrigerate for 30 minutes.
- Use the foil overhang to lift the bars out of the dish, then cut into squares. Store in an airtight container.
