Ingredients
- 1 egg white
- 1/2 cup honey
- 1/2 cup creamy peanut butter
- 1/4 teaspoon cinnamon
- 3 cups Old Fashioned oatmeal oats
- 1/2 cup butter, melted
- 1/2 cup golden raisins
Directions
- Fit a 9x13 baking pan with parchment, leaving extra hanging past the sides. Move an oven rack to the middle position, then heat the oven to 350 degrees F.
- Measure 1/2 cup of the oatmeal oats into a food processor and pulse until the pieces are fine. Tip those ground oats into a bowl with the rest of the oatmeal and the cinnamon, then stir to combine. If there’s no food processor handy, skip the grinding and continue with the recipe using the full amount of oats.
- Using a stand mixer or a whisk, whip the egg white until it turns foamy. Mix in the honey, then mix in the peanut butter. Add the oats and cinnamon. Drizzle the melted butter over the bowl and stir until everything is thoroughly mixed. Fold in the raisins.
- Transfer the mixture to the prepared dish and smooth it across the parchment-lined bottom in an even layer.
- Bake for 25 minutes, until the top is deep golden. Take the pan out and allow it to rest for 5 minutes. With a sharp knife, slice it into 12-16 bars. Put the pan back in the oven. Set the heat to 300 degrees F, then continue baking for 15 more minutes. Take it out of the oven and let it cool.
- Wait until the bars are completely cool before eating them. That final cool-down is what helps them firm up; if you rush it, they can crumble more than you want.
