Ingredients
- 15 oz can black beans
- 3 green onions
- 1/2 Tbsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/8 tsp cayenne pepper
- 1/2 tsp salt
- 19 oz package lean ground turkey
- 1 ripe avocado
- 1/2 lime
- 1/8 tsp garlic powder
- 1/2 cup sour cream
- 1/2 tsp sugar
- 5 pita halves
- 2 Roma tomatoes, sliced
Directions
- Heat the oven to 375 degrees. After draining the black beans, rinse them well and move them to a large bowl. Crush them lightly, using your hands or a potato masher. Add the sliced green onions, then sprinkle in the salt, cayenne pepper, garlic powder, cumin, and chili powder. Stir until the seasoning is worked evenly through the beans.
- Put the ground turkey into the seasoned beans and use your hands to combine everything thoroughly. Shape the mixture into 10 small patties, about 2-2.5 inches across and 1/2 inch thick. Set the patties on a roasting pan, or place them on wire cooling racks set over a foil-covered baking sheet.
- Bake for 20 minutes in the heated oven, until the outsides are browned and the centers are no longer pink. If you prefer, the patties can also be cooked in a skillet, on a grill, or on an indoor countertop grill.
- As the patties cook, make the avocado sauce. Put the diced avocado in a blender, then squeeze in half a lime, about 2 Tbsp of juice. Add the sour cream, sugar, salt, and garlic powder. Blend, gradually adding 2-4 Tbsp of water, until the sauce is thick and smooth.
- Spread some sauce inside each pita half, then add a couple tomato slices and two turkey patties.
