Miso Roasted Brussels Sprouts
Roasted Brussels sprouts get a glossy miso-vinegar coating and crisp, browned edges for a simple side with deep savory flavor.

Ingredients
- Olive oil
- Salt
- Black pepper
- Pepper
- Half
- Cooking spray
Directions
- Set the oven to 400°F. Coat a large baking sheet with cooking spray and put it aside.
- Whisk the olive oil, miso and vinegar in a small bowl until the mixture is smooth.
- Place the Brussels sprouts in a larger bowl, pour in the miso mixture, and toss until the sprouts are coated all over.
- Arrange the Brussels sprouts in a single, even layer on the prepared baking sheet. Add a generous shower of freshly cracked black pepper.
- Roast for 15-20 minutes, taking the pan out midway to toss the Brussels sprouts, until they are tender and lightly charred at the edges. The loose leaves should get especially crisp.
- Take the pan out of the oven and serve right away. Add more salt and black pepper if the sprouts need it.
