Ingredients
- 1/2 Tbsp ground cumin
- 1 tsp ground turmeric
- 1 tsp cinnamon
- 1/4 tsp cayenne pepper
- 1 tsp paprika
- 1/4 tsp salt
- 2 Tbsp olive oil
- 2 lbs. sweet potatoes
- 1/4 bunch cilantro
Directions
- Heat the oven to 400ºF. Add the cumin, turmeric, cinnamon, cayenne pepper, paprika, salt, and olive oil to a small bowl, then stir them together.
- Peel the sweet potatoes and cut them into roughly 3/4-inch cubes. Put the cubes in a bowl, pour the seasoned oil over them, and toss until every piece is nicely coated.
- Arrange the sweet potatoes across a baking sheet in one even layer. Roast for 15 minutes, stir them around, then slide the pan back into the oven for 15 minutes more, until the potatoes are tender.
- When the sweet potatoes are done, taste and add another pinch of salt if they need it. Coarsely chop the cilantro and scatter it over the potatoes right before serving.
