Ingredients
- 1 cup steel cut oats
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 1/2 tsp vanilla extract
- 1/4 cup brown sugar
- 1/2 cup raisins
- 1/4 cup sliced almonds
- 1 cup light coconut milk
Directions
- Set a medium pot over the stove with 4 cups of water and 1/2 tsp salt, and bring it to a full boil. Stir in 1 cup steel-cut oats, then lower the heat to medium/low so the pot bubbles gently. Cook for about 30 minutes, stopping when the oats have thickened to the consistency you like.
- While the oats are cooking, stir in the cinnamon, ginger, cloves, vanilla extract, and brown sugar so the spices have time to bloom into the porridge.
- When the oats are done, portion them into four servings. Finish each bowl with 2 Tbsp raisins, 1 Tbsp sliced almonds, and 1/4 cup coconut milk, then serve.
