Ingredients
- 1/4 cup chicken or vegetable stock
- 1 tablespoon honey
- 1 teaspoon soy sauce
- 1/2 cup chicken or vegetable stock
- 3 tablespoons soy sauce
- 1/4 cup honey
- 1 tablespoon rice vinegar
- 1 tablespoon shaoxing cooking wine or cooking sherry
- 1 tablespoon cornstarch
- 4 garlic cloves, sliced thinly
- 1 tablespoon grated ginger
- 2-5 dried red chilies, roughly chopped OR 1/4-1/2 teaspoon dried chili flakes
- 3 tablespoons sesame, grapeseed, or other high smoke-point oil
- 2 lbs. of mixed mushrooms, roughly chopped or quartered
- 1 1/2 cups of snow peas or snap peas, de-stringed
- 8 green onions, chopped
- Toasted sesame seeds, optional
Directions
- For the glaze, whisk the stock, honey, and soy sauce together in a bowl, then put it to the side. In a separate bowl, whisk the stock, soy sauce, honey, rice vinegar, cooking wine or sherry, and cornstarch until smooth, and set that aside too. Add 1 tablespoon of oil to a large skillet or wok set over high heat. Once the oil shines and a drop of water vanishes in under a second, add the mushrooms and toss them in the pan.
- Cook the mushrooms for a few minutes, until they begin to squeak a little and release liquid into the skillet. At that point, pour in the glaze. Let it bubble away, stirring now and then, for about 5-6 minutes.
- When almost all the liquid has cooked off, move the mushrooms off the heat and transfer them to a bowl. If a little caramelized sugar sticks to the sides of the pan, do not worry about it.
- Turn the heat down to medium and pour in the remaining 2 tablespoons of oil. Stir in the garlic, ginger, and chilies, and cook just until they smell fragrant, about 30 seconds.
- Add the snow peas and green onions, then toss everything together for about 30 more seconds.
- Raise the heat to high. Pour in the sauce and let the mixture boil; it will thicken quite a bit. Return the mushrooms to the pan and cook for about 20 more seconds, then remove the pan from the heat.
- Serve over rice, with sesame seeds on top if you are using them.
