No-Bake Black Sesame and Honey Puddings

Ingredients

  • 1/4 cup toasted black sesame seeds or 3 tablespoons of black sesame seed paste
  • 1/3 cup honey
  • 1 1/2 cups whole milk
  • 2 1/4 teaspoons powdered gelatin
  • 1 1/2 cups heavy cream

Directions

  1. If you are starting with whole toasted sesame seeds, grind them with a mortar and pestle or pulse them in a spice grinder until they are broken down; the mortar and pestle leaves the pudding a bit more textured, while the grinder makes it smoother. For a small food processor, combine the whole toasted seeds with 1/3 cup honey and pulse until finely ground, about 5 minutes. If your black sesame seeds are already ground, skip straight to preparing the milk mixture.
  2. Pour the milk into a medium saucepan, then scatter the powdered gelatin evenly across the surface. Leave it alone for 5 minutes so the gelatin can soften.
  3. Set the saucepan over low heat and stir the milk steadily until the gelatin has fully dissolved. Add the crushed black sesame seeds and honey, keeping in mind that the honey is already mixed in if you used the small food processor method. Take the pan off the heat, then whisk in the heavy cream.
  4. Pour the pudding mixture into 6 ramekins or dessert glasses. Cover each one with plastic wrap and chill until firm, at least 2 hours or overnight.
