Old Fashioned Iced Oatmeal Cookies

Ingredients

  • 1 1/2 cups old fashioned oats
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup butter, softened, I used salted
  • 3/4 cup granulated sugar
  • 3/4 cup light-brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups powdered sugar
  • 3 Tbsp milk

Directions

  1. Heat the oven to 350 degrees. Add the oats to a food processor and pulse them for about 15 seconds, stopping while they still have some texture.
  2. In a mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg and processed oats, whisking for 30 seconds so everything is evenly distributed.
  3. Set up an electric stand mixer with the paddle attachment. Beat the butter, granulated sugar and light-brown sugar on medium-high speed until the mixture looks lighter and fluffy, about 3 – 4 minutes.
  4. Add the eggs one at a time, mixing after each one until it disappears into the batter. Mix in the vanilla.
  5. Turn the mixer to low, then gradually add the dry mixture. Mix only until the dough comes together, scraping the bottom and sides of the bowl as needed.
  6. Leave the dough at room temperature for 10 minutes.
  7. Portion the dough in about 2 Tbsp mounds and place them on a baking sheet lined with a silpat or parchment paper.
  8. Bake at 350 degrees for 11 – 15 minutes. Let the cookies sit on the baking sheet for several minutes, then move them to a wire rack and cool completely.
  9. Whisk the powdered sugar and milk together in a mixing bowl. Dip the tops of the cooled cookies into the icing, letting the extra drip back into the bowl, or spread the icing over the cookies instead.
  10. Place the cookies back on the wire rack until the icing sets. Store them in an airtight container at room temperature.
