Old Fashioned Pink Popcorn

Ingredients

  • 2/3 cup popcorn kernels, popped
  • 2 cups granulated sugar
  • 2/3 cup half and half
  • 1 Tbsp light corn syrup
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 6 drops red food coloring

Directions

  1. Divide the popped popcorn between 2 very large mixing bowls and put them aside. In a large saucepan, whisk the sugar with the half and half, corn syrup, and salt.
  2. Set the pan over medium high heat and stir continuously until the sugar has melted into the mixture. Continue cooking, stirring now and then, until the syrup reaches 232 degrees.
  3. Take the saucepan off the heat right away, then stir in the vanilla and food coloring. Pour the hot syrup over the popcorn.
  4. Fold everything together gently until the popcorn is coated all over and the coating starts to set and dry; the kernels will begin to pull apart from one another. Spread the popcorn out on waxed paper and leave it to dry for about 20 minutes. Store in an airtight container.
