Orange, Chocolate Chunk and Sea Salt Cookies

Ingredients

  • 2 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp table salt
  • 1 cup unsalted butter, softened
  • 1 cup packed light-brown sugar
  • 3/4 cup granulated sugar
  • 1 Tbsp orange zest
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3/4 tsp orange extract
  • 4 oz bittersweet chocolate, chopped into chunks
  • 4 oz semi-sweet chocolate, chopped into chunks
  • 4 oz milk chocolate, chopped into chunks
  • Flaky or coarse sea salt

Directions

  1. Whisk the flour, baking powder, baking soda and salt together in a mixing bowl for 30 seconds, then put the bowl aside. In an electric stand mixer with the paddle attachment, beat the butter, brown sugar, granulated sugar and orange zest until the mixture looks creamy, about 2 minutes.
  2. Mix in one egg until it disappears into the dough, then add the second egg along with the vanilla extract and orange extract, and mix again until everything is incorporated. Turn the mixer to low, gradually add the flour mixture, and stop as soon as the dough comes together. Fold in the chocolate chunks.
  3. Scoop the dough into large balls, using about 3 Tbsp for each one, or 58 grams each. Move the dough balls onto plates, cover them with plastic wrap, and refrigerate for 1 hour. During the last 10 minutes of chilling, heat the oven to 350 degrees.
  4. Arrange the chilled dough balls on baking sheets lined with Silpat or parchment paper, then add a light sprinkle of sea salt over the tops. Leave any dough balls that are not going into the oven in the refrigerator. Bake in the heated oven for about 11 – 12 minutes.
  5. Let the cookies rest on the baking sheet for several minutes, then move them to a wire rack to finish cooling. Store them in an airtight container.
  6. For the chocolate, the original mix used 4 oz Ghirardelli bittersweet baking chocolate, 4.25 oz Hershey's Special Dark chocolate and 4.25 oz Symphony bar, without toffee. You can use just one kind of chocolate if that is what you prefer, or keep the mix of three chocolates.
