Orange Cranberry Chocolate Chip Cookies

Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 tsp cornstarch
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup salted butter, softened
  • 1 cup packed light-brown sugar
  • 1/2 cup granulated sugar
  • 2 tsp orange zest
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp orange extract
  • 1 tsp vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 cup dried cranberries, roughly chopped

Directions

  1. Heat the oven to 375 degrees. In a mixing bowl, whisk the flour, cornstarch, baking powder, baking soda and salt until evenly combined.
  2. In the bowl of an electric stand mixer with the paddle attached, beat the butter, light-brown sugar, granulated sugar and orange zest on medium-high speed until the mixture looks light and fluffy, about 4 minutes. Add the egg and egg yolk, then mix in the orange extract and vanilla extract.
  3. Turn the mixer to low and add the dry mixture gradually, mixing only until the dough comes together. Fold in the chocolate chips and cranberries. For cookies that match the photo, hold back a few chocolate chips and cranberries and press them gently onto the tops of the dough balls before baking.
  4. Portion the dough in 2 Tbsp scoops, roll each one gently into a ball, and arrange them on Silpat-lined cookie sheets with 2-inches between them.
  5. Bake in the heated oven for about 10 – 11 minutes. Leave the cookies on the baking sheet for 2 minutes, then move them to a wire rack to finish cooling. Store them in an airtight container. Orange extract is usually stocked near the vanilla extract in most grocery stores or supermarkets.
