Peach Melba French Toast Casserole

Ingredients

  • 8 slices of white bread, cut into cubes
  • 2 cups of fresh or frozen peaches, diced
  • 1/2 cup of granulated sugar
  • 2 tablespoons of cornstarch
  • 1 teaspoon of ground cinnamon
  • 4 eggs, lightly beaten
  • 2 cups of milk
  • 1 teaspoon of vanilla extract
  • 1/4 cup of melted butter
  • 1/4 cup of sliced almonds, optional

Directions

  1. Heat the oven to 350°F (175°C). Butter a 9x13 inch baking dish, or coat it with non-stick cooking spray.
  2. In a medium bowl, add the melted butter, vanilla extract, milk, eggs, cinnamon, cornstarch, and sugar. Whisk everything together until the mixture is smooth and evenly blended.
  3. Scatter the bread cubes into the prepared baking dish, then spoon the diced peaches over the top. Pour the egg mixture evenly over the bread and peaches. Add the sliced almonds, if using.
  4. Bake for 40 minutes, until the casserole is golden on top and the middle is set. Serve it warm with maple syrup or honey, if you like.
