Peach Pancakes

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 1/2 teaspoons baking powder
  • Pinch of salt
  • 1 1/2 cups milk
  • 3 tablespoons butter, melted
  • 2 eggs, beaten
  • 1/4 teaspoon minced fresh ginger
  • 1 1/2 cups diced peaches, fresh or frozen
  • 2-3 tablespoons butter, for cooking pancakes

Directions

  1. Grab a large bowl and whisk the all-purpose flour, sugar, baking powder and salt until everything looks evenly mixed.
  2. In another bowl, stir together the milk, butter, eggs and ginger. Add the liquid mixture to the flour mixture and whisk just until the batter comes together, then gently fold in the chopped peaches.
  3. Warm a large skillet or grill-pan over medium high heat. Scoop about 2 tablespoons of batter onto the griddle or skillet for each pancake, nudging a few peach pieces into each one as you go.
  4. When bubbles start showing up on the surface, turn the pancakes over and cook the other side. Serve them with honey drizzled over the top, with a bellini alongside.
