Zebra Marble Pancakes

Ingredients

  • 2 cups self raising flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • Pinch of salt
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cup skim milk
  • 2 tablespoons reduced fat butter, melted
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons milk

Directions

  1. In a bowl, mix the flour, sugar, baking powder and salt with a whisk. Create a hollow in the middle, then add the egg, vanilla and milk. Whisk the liquid ingredients in the center first, then gradually pull in the dry mixture. Pour in the melted butter and whisk once more, until the batter is smooth and creamy.
  2. Transfer half of the batter to another jug or bowl. Add the cocoa powder and whisk until it has fully blended in. If that batter seems too thick, mix in the extra 2 tablespoons of milk.
  3. Warm a nonstick pan coated with cooking oil spray, or lightly grease it with butter/oil. Pour about two tablespoons of the plain batter into the center of the pan, then immediately add two tablespoons of the chocolate batter on top. Keep alternating the batters this way until you have 5-6 rings; using more batter will make larger pancakes. The circles will form a striped pattern, and they do not need to look perfect.
  4. Cook until bubbles appear across the surface, then turn the pancake and cook the other side until it is done, just like regular pancakes. Continue with the remaining batter, greasing the pan between every second or third pancake as needed, depending on your pan.
  5. Serve with maple syrup, ice cream, fruit, berries melted chocolate, whatever you like.
