Ingredients
- 1 Tbsp coconut oil
- 3 cups riced cauliflower
- Pinch of salt
- 1 tsp freshly grated ginger
- 1 fresh lime
- 1/2 Tbsp soy sauce
- 1/2 Tbsp chili garlic sauce
- 1 red bell pepper
- 1/4 red onion
- 1/2 cup chopped peanuts
- 1 cup fresh cilantro leaves
Directions
- Warm a large skillet on medium, then pour in the oil and tilt the pan so it coats the bottom. Stir in the riced cauliflower with a pinch of salt, and cook it over medium for about 5 minutes, stopping when it is as tender as you like. Scoop the cauliflower into a bowl and let it cool while you prep everything else; you can tuck it into the refrigerator if you want to speed things along.
- Juice the lime into a small bowl until you have 2 Tbsp. Add grated ginger next, then the soy sauce and chili garlic sauce, and stir it all together.
- Cut the red bell pepper and red onion into fine dice. Strip the cilantro leaves away from the stems and give them a rough chop. Chop the peanuts roughly too.
- Put the bell pepper, onion, cilantro, and peanuts into the bowl with the cooled cauliflower. Drizzle the dressing over the salad, then toss until everything is mixed. Eat it right away, or chill it until you are ready.
