Pear, Parmesan, and Cashew Salad
Thin pear slices, peppery greens, Parmesan and cashews make a quick lemony salad with sweet-salty crunch.
Prep 10 min ยท Makes 4 servings

Ingredients
- 2 Bosch pears, sliced thinly
- 5 ounces greens, a mixture of arugula and mesclun
- Juice of one lemon
- 1/4 cup olive oil, or to coat
- Shaved Parmesan or Piave cheese
- Handful unsalted cashews, crushed roughly
Directions
Place the greens in a large salad bowl. Circle the inside of the bowl with a light drizzle of olive oil 3-4 times, using only enough to slick the sides. Repeat with the lemon juice. Sprinkle in a generous pinch of salt for each person. Add the pear slices, then use a gentle hand to toss the salad until the greens are evenly dressed with the oil and lemon. Taste, then tweak the balance of oil, acid, and salt as needed. Scatter the cashews and shaved cheese over the top, and add freshly ground black pepper to finish.
