Plantains in Temptation Sauce

Plantains in Temptation Sauce

Directions

  1. For the plantains, warm 1 teaspoon oil in a medium skillet that has been coated with cooking spray, setting the pan over medium heat. Add 1 cup plantains and cook them for 2 minutes per side, until they turn golden. Transfer the plantains out of the skillet, then do the same with 1 teaspoon oil and the rest of the plantains. Put them aside.
  2. For the sauce, add the sugar to a heavy saucepan and set it over medium heat. Cook, stirring when needed so it melts evenly, until the sugar has dissolved, about 9 minutes. Mix the water and vinegar together, then pour that mixture carefully into the sugar while stirring constantly; it will bubble up quite a bit. Cook for 2 minutes, or until the sugar dissolves again. Stir in 1 1/2 teaspoons rind, the cinnamon, and the cloves, then raise the heat to medium-high. Cook for 25 minutes, until the sauce has reduced to 1 cup. Add the plantains and cook for 2 minutes, spooning the sauce over them, until they are hot all the way through. Stir in the butter and warm until it melts. Finish with 1/2 teaspoon rind.
