Teriyaki Mushroom Sauce with Grilled Salmon
Grilled salmon gets a glossy teriyaki mushroom topping for a savory, quick dinner with just enough sweetness and depth.

Ingredients

- Cooking oil
- Mushrooms
- Salmon fillets

Directions
- For the Easy Teriyaki Sauce, combine all of the sauce ingredients in a small saucepan with a whisk. Set it over low heat and simmer for 3 minutes, just until it becomes a bit thicker.
- Coat the salmon fillets with 1 tablespoon of the cooking oil, then season them with salt and pepper. Put a frying pan over high heat, and cook the salmon for 3-4 minutes per side, stopping when it is just cooked through. Transfer the salmon to a plate so it can rest.
- Set the frying pan back on the stove over medium-high heat. Once the pan is hot, pour in the remaining 1/2 tablespoon of cooking oil. Add the mushrooms and sauté for about 2 minutes. Turn the heat down to low, stir in the teriyaki sauce, and simmer for 1 minute.
- Spoon the teriyaki mushrooms over the salmon. Finish with green onion, if desired.
